Paleo Meatballs with Creamy Pumpkin Sauce (GF, DF)

This recipe is a winner! It’s a bit of a twist to your normal spaghetti meatballs but it will not disappoint.⁣

You will need:

  • 1kg mince⁣
  • 1Tbs miso paste⁣
  • 1Tbs bone broth powder⁣
  • 4cloves garlic crushed⁣
  • 1/2 onion finely chopped⁣
  • 1Tsp dried thyme ⁣
  • 1Tbs olive oil⁣
  • 1 grated carrot⁣
  • 3Tbs of tomato paste⁣

What you need to do:

Preheat oven to 180 degrees Celsius. ⁣
Mix all ingredients together in a bowl until we’ll combined.

Line a large baking tray with baking paper.

Roll the mince mix into balls and place on tray.

Pop in oven for 30-40min.⁣

What you need to make the pumpkin sauce:

  • 2cups of pumpkin, peeled and cubed⁣
  • 1x 400ml can of coconut milk⁣
  • 1 clove garlic crushed⁣
  • 1/2 onion chopped⁣
  • 2 tsp bone broth powder⁣

What you need to do:

In a saucepan sauté onion and garlic in a small amount of coconut oil.

Add pumpkin, coconut milk and bone broth and bring to the boil.

Turn down the heat and simmer for 20min. Once cooked blend till smooth with either a stick blender or food processor. ⁣

Note: If you have a thermomix you can saute onion and garlic for 3 min on heat 7 with varoma lid removed. Then add other ingredients, cook for 20mins on Varoma heat, speed 2. Once cooked blend on speed 9 for 40secs. ⁣

Serve over your favourite pasta or noodles. I used 100% buckwheat soba noodles and it was really yummy! ⁣

You can add salt and pepper to taste.

Note: This will make a large batch so you will potentially have some leftover meatballs
