Choc Paleo Pancakes šŸ„ž šŸ«

So last Sunday I thought it was Fatherā€™s Day – I got the kids out of bed and we rushed around while Chris was out surfing to surprise him with pancakes.

About halfway through the pancakes I realised I got the date wrong šŸ˜‚ but we decided to shower him with love anyway. When Chris arrived home he was greeted by our son who started to say happy Fatherā€™s Day but it came out ā€œhappyā€¦ mummy got the date wrongā€ šŸ¤£

Safe to say the pancakes were thoroughly enjoyed by all regardless. I hope you love this recipe as much as we do!

Choc Paleo Pancakes with Blueberries

This recipe makes 8-9 large size pancakes but you could make double the amount of smaller size pikeletā€™s if you wish.

You will need…

  • 6 eggs
  • 2 cups almond flour
  • 2 cups tapioca flour
  • 1 cup almond milk
  • 2 tablespoons cacao powder
  • Ā½ tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Generous pinch of salt
  • 9x heaped teaspoons of virgin coconut oil pan (one for each)

Method:

In a large bowl combine all ingredients until well combined and smooth.

Heat pan on a medium heat and add first heaped teaspoon of coconut oil.

Once oil is melted spread over pan and then pour on pancake batter to desired size (see tips below).


Wait until the batter in bubbling across the top side of pancake before flipping and leave on for one more minute before scooping off the pan. Repeat these steps ensuring you add more coconut oil each time before adding fresh batter. Continue until you run our of batter.

Once you have cooked all the pancakes serve with fresh berries, tahini, syrup of choice(coconut flower nectar or honey or maple syrup) & which ever other toppings you fancy.

Tips:

Leave at least 5cm from edge of pan without batter- if itā€™s too big or you donā€™t have enough free space it will be too hard to flip.


If you can, use a non tox pan. I use a 24cm Solidteknics wrought iron griddle/crepe pan and have found (now that itā€™s seasoned which took some time) as long as I use generous amounts of coconut oil and a solid stainless steel turner (spatula) the pancake doesnā€™t stick.I highly recommend Solidteknics and their pans as they are so much healthier than other cooking options that can be toxic.
