AIP/Paleo Friendly Meat Loaf

 

Who else struggles to find meals the whole family will eat? Especially if you have food intolerances or picky eaters in the house.

Ok one of my current favourites (which has been one of my most requested recipes to date!) is what my little boy has called meat cake 🤣

It’s basically a healthier version of meat loaf and I always make a large batch and pop half in the freezer. It’s AIP, paleo, gluten, dairy, egg, nuts and soy free and tastes amazing.

 

You will need…

  • 1kg grass fed/finished beef
  • 1 onion finely chopped
  • 4 cloves garlic (You can sub the onion and garlic for a tablespoon of organic powdered versions if you prefer)
  • 1/4 cup olive oil
  • 2 grated carrots
  • 2 grated zucchinis
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon turmeric

 

Instructions

Combine well and spilt into 2 baking dishes.

Pop in fan forced oven on 180degrees for 30-40min. There will be quite a lot of liquid in the dish but if you let it sit in the liquid as it cools it will soak it up.

Tip: I cut up some sweet potatoes into thin strips and coat in coconut oil or duck fat season with salt and pop in at the same time for a yummy side.



This dish gets gobbled up every time. For someone in a similar situation to us this makes my life so easy. And if I realise I don’t have anything for breakfast or lunch I can easily take a serving out of the freezer and reheat in the oven. ❤️
