Beetroot, Sweet Potato and Pumpkin Soup
With winter still showing you how good it is at getting really cold even when spring is just around the corner, I thought it would be a perfect time to share my Beetroot, Sweet Potato and Pumpkin soup.
This is a very easy soup and I love its beautiful colour.
Ingredients:
-200 grams chopped sweet potato skinned *
-200 grams chopped pumpkin skinned *
-200 grams chopped beetroot skinned *
*(if you are making this in a Thermomix don’t worry about taking off the skin as there are so many great nutrients in the skin and once you blend it you will not even notice the skin)
-2-4 garlic cloves
-1 large white onion roughly chopped
-1 can of crushed tomatoes
-1 tablespoon of organic vege stock
-Water
-Salt and Pepper to taste.
Method:
Throw all ingredients into a pot and fill with water until vegetables are covered.
Boil until the vege’s are soft.
Blend together with a stick blender.
Alternatively if you have a Thermomix throw everything into your Thermomix cook for 30 min/ 100 degrees/ speed 1. Blend for 1 minute gradually increasing from speed 1-speed 9.
Add salt and pepper to taste.
Serve and enjoy.
