Chilli Cumin Pumpkin Soup

Wow you can really feel that winter is on its way this week, so I thought it would be a perfect time to share my Chilli Cumin Pumpkin soup.

This is a very easy throw together soup and we love it.

Ingredients:

-1/2 a pumpkin deseeded, cubed and skinned (if you are making this in a Thermomix don’t worry about taking off the skin as there are so many great nutrients in the skin and once you blend it you will not even notice the skin)

-2-4 garlic cloves

-1 large white onion roughly chopped

-1 can of crushed tomatoes

-1 heaped teaspoon of turmeric

-1 tablespoon of cumin

-1 whole chilli including seeds (if you don’t like chilli meals feel free to leave this out)

-1 teaspoon Himalayan sea salt

-1 teaspoon of coconut sugar

-Water

Method:

Throw all ingredients into a pot and fill with water until vegetables are covered.

Boil until the pumpkin is soft.

Blend together with a stick blender.

Alternatively if you have a Thermomix throw everything into your Thermomix cook for 20 min/ 100 degrees/ speed 1. Blend for 1 minute gradually increasing from speed 1-speed 9.

Add salt and pepper to taste.

Serve and enjoy.
