Gluten Free and Dairy Free Banana and Pear Loaf
This is the first recipe I have created since my beautiful little boy was born. It was a slow Sunday morning and my 6week old boy was peacefully asleep … It was such a good feeling to be back in the kitchen experimenting. I think I’m finally getting the hang of being a new mumma.
What you need:
½ cup of coconut flour
3 ripe bananas
2 tablespoons of unhulled tahini
1/4cup of honey
1 teaspoon cinnamon
1 teaspoon bicarb soda
Pinch of salt
What you need to do:
Preheat oven to 180 Degrees Celsius and line your loaf tin with baking paper.
Peel pear, cut in half and deseed.
Blend remaining ingredients until smooth and well combined.
Place both sides of the pear into the loaf tin with the core facing to the base of the loaf tin.
Pour mixture over the top of the pear.
Bake for 45-50 minutes or until a skewer comes out cleanly.
