Maple, Cinnamon and Banana Muffins- Gluten, Dairy and Nut Free

Do you ever find you have a few bananas in your fruit bowl that are starting to go brown and you are not sure what to do with them as no one wants to eat them?

Don’t let them go to waste! Ripe bananas are fantastic in baking… last week I was in the same predicament as I was due to go away for work and I needed to use them up quick smart.

I came up with this recipe by throwing together a few ingredients I had in the cupboard and it is the perfect addition to any lunch box. Such a yummy healthy treat.

These muffins are gluten, dairy, nut and refined sugar free. Enjoy xx

 

What you need:

 

-2-3 ripe bananas

-6 eggs

-1/2 cup coconut flour

-1 teaspoons vanilla bean extract

-2 teaspoons of cinnamon

-1 teaspoon of baking powder

-2teaspoons of chia seeds

-2-3 tablespoons of maple syrup

 

What you need to do:

 

Preheat oven to 180 Degrees Celsius

Line a muffin tray with either baking paper or patty cakes

Using a food processor or high powered blender, blend all ingredients together until smooth.

Spoon mixture evenly into the different portions

Bake for 20mins.

Serve and enjoy.
