Healthy Coconut Ice

I have this great memory of Coconut Ice from when I was a child. We were at a small family reunion and someone had bought along a large bowl of Coconut Ice squares and I remember sneaking up to the table many times to gobble as much of the bowl as I possibly could – I absolutely loved it! Now every time I see Coconut ice it reminds me of that day with my family.

Traditional Coconut Ice recipes call for icing sugar, food colouring, milk, and butter and as I don’t eat much dairy these days I decided to make my own healthy version! However try to use organic coconut as conventional coconut has preservative 220 which has been linked to asthma, neurotoxicity and stomach upsets, amongst other things so it is best to avoid. A good tip is to buy Coconut Flakes in bulk and prior to adding other ingredients blend the flakes down to make dessicated coconut, as it works out much cheaper.

This version is preservative free, dairy free and refined sugar free and I’m sure you will absolutely love it.

Healthy Coconut Ice

 

What you need:

 

White layer

4 cups desiccated coconut

2 tablespoons raw honey

2 tablespoons coconut oil (melted)

1 teaspoon vanilla extract

 

Pink layer

½ teaspoon beetroot juice (easy tip for beetroot juice below)

4 cups desiccated coconut

2 tablespoons raw honey

2 tablespoons coconut oil (melted)

1 teaspoon vanilla extract

 

What you need to do:

Blend all ingredients of the white layer together in a high powered blender or food processor until very well combined.

Firmly press into a bread load tin which has been lined with baking paper.

Pop into the freezer to set while you make the pink layer.

If you do not have any beetroot juice you can easily grate ½ a small beetroot and place grated beetroot onto a small piece of muslin cloth or inside a nut milk bag and squeeze juice out.

Blend all of the pink layer ingredients together (you do not need to wash out the blender or food processor, just use the same one)

Once all the ingredients are well combined, grab the loaf tin out of the freezer and check that the first layer is quite solid, if not pop back in the freezer for 10 more minutes.

Press the pink layer ontop of the white layer and pop in the fridge for an hour to set.

Once set cut into small cubes and enjoy xx
