Gluten Free and Dairy Free Choc Banana cake

I absolutely love the taste and texture of this cake. This is really simple to throw together and oh so delicious! Enjoy!


What you need:


½ cup coconut flour

½ cup almond flour

2 tsp baking powder

¼ cup cacao powder

400ml coconut milk

2 bananas

2tbsp rice malt syrup

1tbsp coconut sugar

4 eggs

2tsp vanilla extract


What you need to do:


  1. Preheat oven to 180 degrees and line a 9 inch square cake tin with baking paper.
  2. Mix everything together until smooth. (If using a thermomix throw everything into the bowl and blend for one minute speed 6, scrape sides and blend for a further 20 seconds.)
  3. Pour into cake tin
  4. Cook for 50mins
  5. Poke cake with a skewer to test if it is cooked. If the skewer is clean the cake is cooked if not cook for a further 10mins or until the cake is ready.
